做法:春笋切成片后(hòu )加(jiā )少许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱(cōng )切(qiē )成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻(fān )炒(chǎo )1分钟左右(yòu )。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水(shuǐ )半掩(yǎn )住春笋,盖上(shàng )锅盖大(dà )火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖(gài )上(shàng )锅盖焖。
