做法:春笋切成片后加少许盐(yán )捞出后用清水(shuǐ )浸泡(pào ),生姜切片,葱切(qiē )成段(duàn )。锅烧热,倒入2勺油,放入生姜、春(chūn )笋(sǔn )、牛肉片(piàn )、葱(cōng )段翻炒1分(fèn )钟(zhōng )左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少(shǎo )量清水半掩住春笋,盖上锅(guō )盖大(dà )火煮开后转中火。煮(zhǔ )到水快熬干(gàn )的时候加入盐,翻炒(chǎo )均匀稍收汁(zhī )时盖上(shàng )锅盖焖。
