做(zuò )法(fǎ ):春笋切成片后加少许盐捞出后用清(qīng )水浸泡,生姜(jiāng )切片,葱切(qiē )成段。锅(guō )烧(shāo )热,倒入2勺油,放入生(shēng )姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清(qīng )水半掩住(zhù )春笋,盖上(shàng )锅盖大火(huǒ )煮开后转(zhuǎn )中火(huǒ )。煮(zhǔ )到水快熬干的时候加入盐,翻炒均(jun1 )匀稍收汁时盖上(shàng )锅(guō )盖焖。
