做法(fǎ ):春笋切成(chéng )片(piàn )后加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左右。再(zài )加(jiā )入生(shēng )抽(chōu )、老抽、蚝(háo )油翻炒均匀(yún ),加(jiā )入少量清水半掩住(zhù )春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时(shí )盖(gài )上锅(guō )盖焖。
