做法:春笋切成(chéng )片(piàn )后加少许盐捞出后用清水浸泡,生姜(jiāng )切片(piàn ),葱切(qiē )成段(duàn )。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片(piàn )、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝(háo )油翻炒均匀(yún ),加入少量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到(dào )水快熬干的时(shí )候加入盐,翻(fān )炒(chǎo )均匀稍收汁时盖上锅(guō )盖焖。
