做法:春(chūn )笋切成片后(hòu )加(jiā )少(shǎo )许盐捞出(chū )后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少(shǎo )量(liàng )清水半掩住春笋,盖上锅盖大火(huǒ )煮开(kāi )后转中火。煮到(dào )水快熬干(gàn )的时候(hòu )加入盐,翻(fān )炒(chǎo )均(jun1 )匀稍收汁时盖上锅盖焖。
