做法:春笋切成片后加少许盐捞出后用清(qīng )水浸泡(pào ),生姜切片(piàn ),葱切(qiē )成(chéng )段。锅烧热(rè ),倒(dǎo )入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加(jiā )入(rù )生抽、老抽(chōu )、蚝油翻炒(chǎo )均匀,加入少量清水半掩住春笋,盖上(shàng )锅(guō )盖大火(huǒ )煮开后转中火。煮到水快熬(áo )干的时候加入(rù )盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖。
