做法(fǎ ):春笋切成片后加少许盐捞出后(hòu )用清(qīng )水(shuǐ )浸泡,生姜切片(piàn ),葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加入生抽、老(lǎo )抽、蚝油翻(fān )炒均匀,加入少(shǎo )量清(qīng )水半掩住春笋,盖(gài )上锅盖(gài )大火煮开后转中火。煮到水(shuǐ )快熬(áo )干的时候加入盐,翻炒(chǎo )均匀稍收(shōu )汁时盖上锅盖焖。
