做法:春笋切成片后加少许盐捞出(chū )后用清水浸泡,生姜(jiāng )切片,葱(cōng )切成段。锅烧热,倒入2勺(sháo )油(yóu ),放(fàng )入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右(yòu )。再(zài )加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩(yǎn )住春笋,盖上锅盖(gài )大火煮(zhǔ )开(kāi )后(hòu )转中火。煮到(dào )水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
