做法:春(chūn )笋(sǔn )切成片后(hòu )加少许盐捞出后用清水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒(dǎo )入(rù )2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽(chōu )、老抽(chōu )、蚝油翻炒均匀,加入(rù )少量清水(shuǐ )半掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮到(dào )水(shuǐ )快熬干的时候加(jiā )入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖。
