做法:春(chūn )笋切成(chéng )片后(hòu )加(jiā )少许盐捞出后用(yòng )清水浸泡(pào ),生(shēng )姜切片(piàn ),葱切成段。锅烧(shāo )热,倒(dǎo )入(rù )2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水半掩住(zhù )春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
