做法(fǎ ):春笋切成片后加少许盐捞(lāo )出后用(yòng )清(qīng )水(shuǐ )浸泡,生姜切(qiē )片(piàn ),葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋(sǔn )、牛(niú )肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清(qīng )水半掩住春(chūn )笋,盖上锅盖大火煮开(kāi )后转(zhuǎn )中火。煮到水快熬干的时候加入盐,翻炒(chǎo )均匀稍收(shōu )汁时盖上(shàng )锅盖焖(mèn )。
