做法:春笋(sǔn )切成片后加少许(xǔ )盐捞出后用清水浸泡,生姜切片,葱(cōng )切成段。锅(guō )烧热,倒入(rù )2勺油,放入生(shēng )姜、春(chūn )笋、牛(niú )肉片、葱(cōng )段翻炒(chǎo )1分钟左右。再加入生抽(chōu )、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水快熬干的时候(hòu )加入盐,翻炒均匀(yún )稍收(shōu )汁时盖(gài )上锅盖焖(mèn )。
